today is such a busy day, but still enough time to share another, delicious, healthy and of course vegan recipe with you guys. Vegan Cookies!
Since it is getting colder outside, we have to face the fact: it’s officially autumn! Even if it feels like winter today. Soooo cold in Vienna!
However, I think there is nothing better for cold and windy autumn evenings, than a good book, warming tea and crunchy cookies! ;)
I’m such a cookie lover. But let’s be honest. We all know, cookies are not thaaat healthy. No problem! Here is my vegan, almost sugar free and healthy version with fresh cranberries. Cranberries are known as superfood, since they are rich in antioxidants and vitamin c. A perfect ingredient for my vegan cookies!
You need (for 15-20 cookies):
Preparation time: around 10 minutes
- 2 bananas
- 1 small cup of oats
- fresh cranberries
- smash the bananas
- cut cranberries into small pieces
- add cranberries and oats to the bananas and mix everything
- preheat the oven on 150°C
- shape small cookies with two spoons
- bake them for around 10 minutes and have a look every now and then
